Backstory: More grocery stores are doing self checkout and scanning produce can be a pain. Either the label is missing or the menu is buried.
The Idea: OCR for produce.
Deep Dive: You would build image recognition software that would scan the piece of produce and charge the customer appropriately. This would have to be configured as an add-on for existing systems. Eventually you would eliminate the need for produce suppliers to put those little stickers on produce.
Validation: This is another step in the direction to lower our waste.
Monetization: You would license this system to grocery stores. You could develop a patent and then try to license the idea to someone else to manufacture.
